Roti is a delicious Malaysian crispy pan fried flat bread that’s best served with vegetable, fish or chicken curry. It can also be served fresh off the hot plate!
INGREDIENTS 290 g wheat flour 160 ml water oil 0.5 tbsp salt 0.5 tbsp sugar
METHOD Dilute salt and sugar in water. Mix flour, salt and sugar mixture evenly. Knead dough until smooth. Divide dough into 6 small balls. Coat each ball with vegetable oil and place on oiled plate. Pour 2-3 tablespoons of oil over the dough and rest overnight in a cool place. Flatten dough and turn it several times until it expands. Lift one side of expanded dough and fold to the other side covering 2/3 of the whole surface. Do the same with the opposite side. Gently pull dough off the working surface. Swirl dough to form circles and gently press swirled dough. Sprinkle some oil on dough before letting the dough rest for 3-5 minutes. Flatten dough once more and place it on a pan heated to medium heat. Lightly brown or wait till it’s crispy on both sides and remove from pan.
